A:is it an electric smoker or charcoal, makes a diff (electric uses less wood than electric); secondly make sure the wood is saturated with warm water for 24 hours that makes it last longer also; thirdly the amount depends on the level of smoke flavor you want. basically when the smoker is at full heat add some wood and then keeep it smoking, as the wood ashes out keep adding, pull the chicken when u think the smokiness is right and if its not cooked thouroghly then finish it in the oven. and my last piece of advice is that hickory is a very pungent wood used mostly for red meats such as beef and wild game, my advice is to use apple or cherry wood, its less pungent and wont over power the flavor of a delicate meat such as chicken By Y!
